Number of servings:  6 cups
Time for preparation (including preparation and cooking): 25 minute
Ingredients:

  • 1⁄2 pound any type of pre-cooked meat (beef, pork, chicken, fish, shellfish)
  • 2 cups water
  • 2 packages oriental flavor instant ramen-style noodles, broken into small pieces
  • 16 ounces frozen Asian-style vegetables, or any other frozen vegetables
  • 2 green onions, thinly sliced
  • 1 Tablespoon fresh ginger or 1/4 teaspoon ground ginger
  • 2 cloves garlic, minced, or 1/2 teaspoon garlic powder

Directions for Stovetop or Electric Skillet:

  • In a large skillet over medium-high heat (or 350 degrees in an electric skillet), add pre-cooked meat, 2 cups of water and ONE seasoning packet, and mix well.
  • Add frozen vegetables, green onion, ginger, and garlic and bring to a boil over high heat.
  • Add ramen noodles, reduce heat to low, and simmer 3-5 minutes until vegetables are tender, stirring occasionally.
  • Refrigerate leftovers within 2 hours.

Directions for Microwave:

  • In a microwave-safe bowl, add 2 cups water, the contents of ONE seasoning packet, frozen vegetables, green onion, ginger, and garlic. Microwave on high for 3-5 minutes.
  • Add ramen noodles and cook 3-5 minutes until noodles are tender.

Notes:

  • Any type of cooked meat, poultry, or seafood would work here. Consider using canned or dried meats for easy additions that don’t require cooking.  Another great protein to add is egg.  At the end of cooking add scrambled egg or sliced, hardboiled egg.
  • Want to up your ramen game? Consider other proteins: smoked oysters, canned crab meat, cooked shrimp, or eggs (scrambled or hard-boiled). Mix up the veggies: thinly sliced bok choy or napa cabbage, shredded carrots, and sliced mushrooms make great additions. After the ramen is cooked, add sesame oil, chili oil, asian chili garlic sauce, sriracha hot sauce, pickled ginger, or kimchi.
