A quick and easy salad – that you can make your own with a variety of vegetables, herbs, fresh or dried, canned tuna or salmon.  Or use different shapes of pasta for more fun variety

Time for preparation (including preparation and cooking): 15 minutes 
Ingredients:

  • 2 cups macaroni, uncooked
  • 5 ounces canned tuna or salmon
  • 1⁄2 cup chopped zucchini (about 1/3 small zucchini)
  • 1⁄4 cup sliced carrots (about 1 carrot)
  • 1⁄3 cup diced onion
  • Salt & Pepper to taste; other dried or fresh herbs such as dill
  • 1⁄4 cup mayonnaise, Greek yogurt, or salad dressing

Directions:

  • Cook macaroni according to package directions. Drain the cooking liquid and cool.
  • Drain tuna or salmon.
  • Mix all ingredients together in a bowl. Chill until ready to serve.
  • Refrigerate leftovers within 2 hours.
