Our family LOVES sauces … of all kinds, and an easy, often requested one is creamy, rich Alfredo sauce. You know LOTS of butter and heavy cream. I always cringed as I melted the cube of butter and added cups of parmesan cheese to the cream. Looking to lighten up and with lots of cauliflower from the garden, we came up with this great option – all the richness and creaminess of the full-fat version, but made with cauliflower. Yes, cauliflower! Your family won’t even notice the difference, and you can always add a bit more butter and/or cream cheese – or none at all. A great way to get saucy, lighten up recipes, and get your vegetables too!
Cauliflower Alfredo Sauce
Based on recipe from Pinch of Yum
Servings: 6-8 as side dish; 4 as main dish
Preparation time: 30 minutes
2 cups cauliflower florets, steamed and chopped/riced
2 cups broth (vegetable or chicken)
1 TBS cream cheese (or more for added creaminess – optional)
1 TBS butter
4 cloves garlic, minced
Sea salt & white pepper, to taste
Add all ingredients to medium saucepan and heat to warm, use immersible blender (or regular blender), and blend to smooth. Heat to bubbly.
Prepare noodles of choice, such as fettucine. Add sauce to cooked noodles
Serve as side dish or add protein (cooked chicken, shrimp or salmon) to make this a main dish.
